Egg, Avocado, Chicken & Re-fried Beans

On Wednesday I needed a nice light dinner before boot camp so I went for my old standby – Eggs. This time I went for some different additions and it was SO tasty you have to try it! Here’s how I did it…

I was just going to eat as is then I though about adding a bit more protein and knew I had some refried pinto beans in the pantry! I also add a bit of water to my eggs to make them go further, I’d estimate about 1/2 an eggs worth of water.

Add the 1/4C of beans and let eggs finish cooking

Then of course I topped it with my favourite salsa, Ol’ El Paso – I seriously use 1 jar a week! I wanted to add some crunch so I crumbled some rice chips on top – seriously delish!

Being “Mama” Comes First

After a long monday I’m eagar to get to my boot camp class on Monday evening – this week was no different. I had a great start to the class rockin’ some Kettlebell Swings, Goblet Squats, Wood Choppers and my heart rate was up and ready to work. I moved to my second exercise some push-up and squats on the TRX straps when I hear my phone buzz with a text message – I finished my set and then went to check my phone (which I don’t normally do when working out) and I saw this…

I quickly said “I gotta go – Sully crashed his bike” and headed home to see what was awaiting me. Thankfully my mom was able to get to the park and pick them up and help with the cleanup and calming him down. By the time I got home my aunt who is a Hygenist was there and had checked his tooth – it was loose but will tighten back up on its own thank goodness!

Needless to say at this point I wouldn’t be able to reach my 500 Calorie goal but I still managed to clock 194 in the 25 minutes I was at my class. We can’t always control our days and just have to do the best we can to work with what we’re delt each day!

Heavy Lifting {Sandbox Edition}

Yesterday while the kiddies napped I was going to snuggle into the couch with my new book and just relax – then I decidied it was a beautiful day and I could relax after they were in bed for the night. I had been telling Sullivan that I would move his sandbox across the yard so he was closer the house for a few weeks now and I thought no better time than now! I should explain – our yard is MASSIVE – its  about 100ft deep and about 50ish feet wide, so moving this from one end to the other was going to be quite the task. It was filled with an entire pick-up truck full of sand so I knew I’d be moving that too. I strapped on the HRM and set to work. The entire process took me about an hour and DH got home just in time to help me finish the job.

I enlisted the help of our wheelbarrow and got moving. My first step was to move the giant frame – its like 10×10 or 10×12, basically the largest sandbox EVER! The entire process took me about an hour and I was sure to keep my form in check so I didn’t hurt my back. It was an awesome workout for sure! It almost had me at my daily goal of 500 calories but I was just shy of it so I set out for a quick Tabata Run/Walk before they woke up! 1 lap around our big block and I hit my 500. Since it was technically “rest” day, I wanted to cap it there and for the day!

WOD: Home Tabata Workout (with toddler)

Today’s workout was a home-based Tabata style workout. I started by doing my Bob Harper workout – it was an AMRAP (as many reps as possible) workout and then didn’t have the room & equipment to make it effective so I jumped over to pinterest and found some good ideas to get me going. Today’s workout took me an hour and 10 minutes and included the following:

  • Mountain Climbers
  • Planks
  • Jacks
  • Squats
  • Goblet Squats
  • Kettlebell Swing Thrus
  • Skipping
  • Russian Twists
  • Weighted Lunges (15lb Dumbell)
  • Squat w/ Overhead Press (15lb Dumbell/each hand)
  • Push Ups
Just as I was getting started Sawyer snuck down out of her bed so I let her stay if she wanted to “exercise” with mommy. It was super cute and she kept saying she was “helping”. I grabbed a quick video of her “squats” & “mountain climbers” that I’ll load tomorrow.
Keeping in line with my NO EXCUSES mantra, I stuck with it despite the awake toddler and pushed through and hit my goal for the day. I didn’t care if I had to run in place for the last 10 minutes I was going to meet my goal. This brings me to my love for my new HRM but thats another post – its truly an awesome tool to have!

New York, New York!

Well wow what a whirlwind of a day! Yesterday I flew into NYC for the first time EVER! I was up bright and early at 315am to catch my 630am flight. Luckily everything was on time and I made it to #FitBlogNYC on time!  Since I’m newer to blogging I was honored to be a part of this awesome event! Some of the most #FitFluential people were there and it was great to meet them all and gather all kinds of tips and tricks to share with you all over the next couple weeks. I took some awesome videos that I’ll be loading and some great voice recordings with some really awesome advice!

When we arrived at the Metropolitan Pavilion we checked in and got our name badges & a little bag with all the info for the day. There were some awesome sponsors (which I’ll feature here over the next couple weeks) and they were all full of so much awesome information! My first stop was to chat with the ladies at Birkenstock USA. I told her my size and removed my shoe – she took a 1 second glance and said hang on I’ll grab you something different (she had already grabbed a pair off the shelf), and the ones she picked fit like a glove! They filled my arch and were the perfect size. I was SO excited to have a pair of nice sandals that would actually fit my feet! I wore them to my office today and I’m sure I’ll be wearing them all summer!

I also made a stop at Reebok to check out the awesome shoe display. See I’ve always loved awesome shoes, however, during my pregnancy I feet grew so wide (4E width) I became limited to wearing crocs flip flops and 1 pair of runners that came in that width. A few weeks ago I went into get a new pair of runners and I was elated when I was able to go down a few widths to a D. In last weeks training session I noticed that my shoes were once again feeling a little roomy – and yesterday proved me right! I didn’t have high hopes when trying on the Reebok’s as I haven’t been able to wear “regular” shoes in over 4 years – and to my shock THEY FIT! I was beyond happy and this opens a whole new world of shopping opportunities for me – this might be bad for the wallet!

Favourite Sancks: Protein Balls & Rice Chips

I’ve been trying my best to eat unprocessed foods for a large percentage of my diet and its easy most of the time, however, sometimes a girl just wants a snack that’s already made and is super tasty! After boot camp last night I had to stop at the grocery store and grab some food for the kiddies as they had cleaned out the fridge of berries, cheese, the rest of their favourite items. I was wandering the organic section when I took a closer look at the protein bars. I’ve been staying away from them as I thought most were too high in calories but I found some great options and with my trip the NYC for the #fitblogNYC and the Tone It Up Meet Up on Wednesday they will be the perfect travel fuel! Here’s the first one I tried and it was super tasty and only 210 calories!

I also found some super yummy rice chips. They are filling and satisfy that “crunch” craving. The only downfall is that the amount of chips in the bag isn’t much for the $3 I paid! Even though “healthy” options can be more expensive, they often have less chemicals, calories etc., and I prefer to spend my money consuming good fuel for my body than spending that money finding a way to lose the weight the crappy food puts on! See I can rationalize just about anything…lol!
